One-on-one cooking classes that can focus on one of the following topics, using seasonal ingredients.

Classes are held in your home kitchen (in the Richmond metro area) or my work kitchen in Midlothian, VA.

Some options of things we can cook together:

  • Simple Italian dishes

  • Basic French bistro cooking

  • Skirt steak, sauce Bernaise

  • Salads/dressings

  • Soups, including (but not limited to):

    • Vegetable soups like minestrone 

    • Chilled summer soups like melon gazpacho

    • Puréed soups like tomato or potato

  • Roman pasta sauces

  • Regional Italian pastas

  • Lasagnas & stuffed pastas

  • Main courses, including:

    • roast pork shoulder

    • stuffed and roasted rack of lamb

  • Poultry, including:

    • Marinating, braising, roasting, grilling, whole or portioned pieces

  • Potatoes, including:

    • Rostï

    • Potato gratins

    • Roasted wedges sea salt /rosemary

    • Perfect potato purée

  • Simple home made desserts, including:

    • Chocolate tiramisu

    • Yellow cake/ chocolate cake

    • Crepes

    • Buckles & crisps

    • Cookies

    • Macerating fruit, fruit coulis, cho sauces, whipped cream, caramel sauces
